Yamecha, Hand rolling tea activity (Sencha)at Hoshino village in Yame city(English translation)
Today is Golden Week, so I decided to have a speial activity that I can't do on a daily , so I tried making sencha by hand rolling tea activity at the "Hoshino Furusato park, Cha- no-bunkakan" at Hoshino Village, Yame City, Fukuoka Prefecture.
For tea rolling, special shoots are used. The finished amount is about 10g.
The process from tea rolling to the completion of sencha is simple.
(1) Hand rolling the tea leaves for 2 minutes and microwave for 1 minute.
(2) Hand rolling the tea leaves for 2 minutes and microwave for 1 minute.
(3) Roll your hands strongly in a small amount until your hands are green, and put them in the microwave for 40 seconds. Around this time, the tea leaves become crispy.
(4) Roll while loosening it so that it is pinched between the fingers of the hand. Finally, spread it out and microwave it for 2 minutes so that it does not drain.
Leave it to cool to room temperature and you're done.
You can eat these finished tea leaves directly, and when you taste them, the umami and sweetness spread, and at the end came a little bitterness.

In the past, it was sometimes produced by hand rolling, but as the production volume increased, it is now produced only by machine.
I also received a pamphlet on how to make delicious tea, and I will have sencha.
The leftover tea husks are fried a little, and then seasoned with soy sauce, mirin, and sugar.
Stir-fry to remove the moisture and sprinkle with ground sesame seeds to make a food boiled in soy sauce of tea leaves.
It is also delicious on the rice.
