Sourdough Diary #10 Cinnamon roll

* Ingredients
Sourdough starter - 88 g
Water ; Brita + T-fal - 70 g
Flour ; Bob's Red Mill unbleached white All-purpose Organic Flour - 70 g
Knead Jan. 31 2021 8:30 p.m. / RT ; ND, RH ; ND
* Ingredients
Flour ; はるゆたかブレンド / 江別製粉 - 300g
Egg - 1 Pc
Salt ; 伯方の塩 あら塩 - 5 g
Bubbly active Sourdough Starter - 100 g
Granulated sugar - 24 g
Melted unsalted butter - 28 g
Warm milk - 160 g
*Procedure
1. Combine butter and milk in a small bowl
2. Mix other ingredients ( egg, starter, sugar, flour, salt)
3. Pour 1 slowly, and mix
4. Rest 30 min
5. Knead (15min eri)
6. Rest 1 hour
7. Stretch and Fold the Dough
8. Bulk rising 8-12 hours in 20 C (cover with plastic wrap)
Cinnamon-Sugar Filling Feb. 01, 2021 8:00- RT; ND, RH; ND
9. Pat the dough into a rectangle
10. Rest 10 min ( making a cinnamon-sugar)
- Mix Sugar(80g), Cinnamon powder(3 tsp), Flour (8 g)
11. Dust the dough and rolling pin with flour
12. Roll the dough into 30 x 40 cm
13. Brush the surface of the dough with the melted butter (20 g)
14. Splinkle the Cinnamon- Sugar, and smooth with hands
15. Roll the dough into a tighten log
16. Cut them into 12 pcs with buttered knife or scraper
17. Put them in the oil coated pan (24cm)
18. Rest 1-2 hours ( this time, actually 3 hours)
Baking Feb. 01, 2021 12:00 - 12:40 p.m.
19. Preheat oven at 170C (Apparatus ; Panasonic NE-BS807)
20. Bake 35 min with steam ( can be less time)
Feedback
- The dough was a little bit sticky.
- change the flour or increase the amount of flour
- Very good rising
- Very good taste
- The amount of Cinnamon- sugar powder can be reduced
