アンチョビとは、カタクチイワシの塩漬けのこと。 新鮮なカタクチイワシの頭と内臓を取り除き、たっぷりの塩で漬けたものです。 それを熟成・発酵させ、オリーブオイルに漬けたものが缶詰や瓶詰にして販売されています。2023/10/01

I found good sardines on sale at the end of the year, so I added some anchovies and completed the dish.
