蕎麦（そば）とは、穀物のソバの実を原料とする蕎麦粉を用いて加工した、日本の麺、および、それを用いた料理である。中華そばとの対比で「日本蕎麦（にほんそば）」、「和蕎麦（わそば）」という表現が用いられるほか、沖縄そばとの対比では「ヤマトそば」と呼ばれることもある
