夏野菜の味噌炒め Summer vegetable stir-fry with miso:おまかせ小品集 Chef's choice dishes collection

「深夜食堂(ドラマの深夜食堂よりずっと前のお話)」でお出しした料理の小品集。材料がある限り何でも出してました。ほとんど即興だったので何百種類も作りましたが、お客様のエピソードを思い出せるものを少しづつ再現します(差し支えある話は多少脚色しています)。

A collection of small dishes served on "Midnight Diner" (a story that took place long before the TV drama "Midnight Diner"). We served anything as long as we had the ingredients. Since it was mostly improvisation, we made hundreds of dishes, but we will recreate little by little the ones that remind us of our customers' episodes (we have dramatized some of the more inappropriate stories).

The inspiration for the recipe

深夜食堂は持ち込みが多かった。独り者も多く、食材を持て余すからだ。また、在庫のやりくりに苦労しながらも低価格を維持している僕に気を使ってくれるという意味もあった。この日のお客は、当時30代の最先端IT企業で働く独身男性。彼、ベランダの広いマンションを借りていたのだが、なぜかベランダ園芸に嵌って、夏は大収穫祭り。リュックに野菜を詰め込み、持ち込んでは、この野菜で何か作れというご注文。ダイエット中の彼のために、肉なしの野菜炒めを作った。彼はその後、遅い大恋愛をして、今では家庭料理三昧の毎日。

Midnight Diner had a lot of customers who brought in their own food. This was because many of them were single and had excess ingredients. It was also a way of showing consideration for me, who struggled to manage inventory but maintained low prices. The customer was a single man in his 30s at the time who worked for a cutting-edge IT company. He rented an apartment with a large balcony, and for some reason he became obsessed with balcony gardening, and in the summer he had a huge harvest festival. He brought a backpack full of vegetables to me and asked me to make something with them. I made a meatless stir-fry for him, as he was on a diet. After that, he fell in love with a woman, albeit belatedly, and now he indulges in her home-cooked meals every day.

ベランダ収穫の夏野菜(この日は苦瓜、ナス、ミニトマト)
生姜
麦味噌(香りの良いお好きな味噌で)
山椒パウダー
酸化しにくい油

procedure:
つくり方:

夏野菜を一口大に切り分ける。苦瓜はスプーンで種をとる。ミニトマトはヘタをとり半分に切る。生姜は千切りにしておく。
フライパンないし中華鍋に油を強火で熱し、生姜を入れて香りが出るまで炒める。
そこにトマト以外の素材を入れて、ざっと炒めたら、蓋をして中火で蒸す。
素材が柔らかくなったら、ミニトマトを入れて、再び強火に戻し、水分を飛ばすように炒める。
トマトがとろけ始めたら、味噌と山椒パウダーを入れて、味噌の香りが立ったら、火を止める。

Cut the summer vegetables into bite-sized pieces. Remove the seeds from the bitter melon with a spoon. Remove the stems from the cherry tomatoes and cut them in half. Slice the ginger into julienne strips.
Heat the oil in a frying pan or wok over high heat, add the ginger and stir-fry until fragrant.
Add the ingredients except the tomatoes and stir-fry briefly, then cover and steam over medium heat.
Once the ingredients have softened, add the cherry tomatoes and return to high heat, continuing to stir-fry until the moisture evaporates.
When the tomatoes start to melt, add the miso and sansho powder, and when the aroma of miso is released, turn off the heat.

Recipe tips and variation

茄子や苦瓜と同じタイミングで、ズッキーニ、皮を剥いた胡瓜、インゲン、四角豆、未成熟のヘチマ、パプリカ、薄めにスライスしたかぼちゃ、まくわ瓜、新牛蒡などを入れても良い。
茄子やズッキーニは油を吸うので、油はやや多めに入れる。
空芯菜、ニラ、ツルムラサキ、ツルナ、モロヘイヤ、おかひじきなど、夏の葉物があるなら、トマトと同じタイミングで入れる。オクラもミニトマトと同じタイミングで入れる。
実山椒(生でも乾燥でも)があるなら、生姜と同じタイミングで炒める。
辛いのが大丈夫なら、この時に、唐辛子を一緒に炒めるか、最後に一味唐辛子を振っても良い。
好みで、仕上げに胡麻油を回し入れても良い。
ちなみに、最後に、うどんを入れて絡めて焼きうどんにするのもおすすめ。

Eggplant and zucchini absorb oil, so add a little more oil.
If you have summer leafy vegetables such as water spinach, Chinese chives, water spinach, Indian spinach, mulukhiyah, or okahijiki, add them at the same time as the tomatoes. Add okra at the same time as the cherry tomatoes.
If you have Japanese pepper berries (either fresh or dried), stir-fry them at the same time as the ginger.
If you can handle spicy food, you can stir-fry chili peppers together at this time, or sprinkle some chili pepper on top at the end.
If you like it, you can add a drizzle of sesame oil to finish.
By the way, it is also recommended to add udon noodles at the end and mix them together to make yakisoba.
