Blueberry Cobbler

I sometimes miss some tastes such as cilantro, cinnamon.

I also miss some American desserts sometimes.

We can find some American style baking goods or American desserts in Japan recently.

But some baking goods or desserts are still hard to find.

Blueberry Cobbler is one of American desserts that is hard to find in Japan.

If I can barely find it but I really want to eat it, I always make it by myself.

I introduce my Blueberry Cobbler recipe.

My Blueberry Cobbler Recipe

We can find fresh blueberries in summer easily.

On the other hand, it is still hard to find the fresh one in the other season in Japan.

But don’t worry!!!!

We can find good frozen blueberries even in convenient stores!!!

I normally choose “LAWSON” to buy frozen blueberries because the blueberries are big and beautiful.

I also recommend Vanilla “Mow” for this cobbler.

Because Mow is reasonable price but great quality to use for desserts.

Of course, you can choose your favorite ice creams and fresh blueberries.

You can find all ingredients in Japanese normal supermarkets.

《Ingredients》

Blueberry filling

・Blueberries 260g
・Granulated sugar 70g
・lemon juice 1tsp
・corn starch 1tbs

Scone topping

・Baking flour or all purpose flour 128g
・Baking powder 1+1/2 tsp
・cinnamon powder 1/2 tsp
・salt 1 pinch
・granulated sugar 50g
・unsalted butter 57g
・1 egg
・milk 60ml

《Instructions》

Preheat oven 200 ℃

1. Add flour, baking powder, sugar, cinnamon powder and salt in the bawl and mix them well with a spoon or a folk.

2. Cut the cold butter in cubes with a knife and add them in the bawl. Cover the butter with dry ingredients and cut the butter much smaller with a scraper or a folk.
When you touch the butter in the bawl, you must feel it is chunky.
Then you can squeeze the butter with your fingers with dry ingredients and make the butter and dry ingredients mix completely like crumble.

3. Add an egg and milk in the bawl and fold them well with a folk or a spoon or a scraper and make the dough.

4. Add blueberries, sugar, lemon juice and corn starch in the pan and cook them with medium heat. When the blueberries are fully cooked and the mixture is bubbly, you can turn off the heat and put the blueberries and the juice into the baking dish.

5. Put the dough on the blueberries in your favorite size and shape.

6. Bake it for 20 - 25 mins until the scones get golden brown.

7. Scoop the blueberries and scone part as much as you want on the plate and put your favorite ice cream on top or side.

You can choose the other berries such as strawberries or raspberries and also apples instead of blueberries.

Also if you don’t like cinnamon flavor, you can use vanilla extract instead of cinnamon powder.

You can make your favorite dessert with your favorite ingredients!!!
