Day 351: eggplant spicy curry, or baingan bhartha
Eggplants, the summer veggie.
I found a recipe of spice curry using this veggie.
This is called, "Baingan Bhartha", eggplant spicy curry.
I grilled them until being charred on the outside peel.
This makes them more fragrant...
Probably it looks a little lousy, but being added with many spices, the curry was very rich taste even though it did not have any meat.
